Banana Bread That's Easy & Delicious

julie binns My friend Shelley sent this recipe to me. It's a great way of using up over-ripe bananas and it's yummy! 300 ml (1 ¼ cups) flour, 5ml Baking Powder, 2 eggs lightly beaten, 125 ml (½cup) oil, 250 ml (1 cup) sugar, 2 ripe bananas mashed, 60 ml (¼cup) chopped nuts. Preheat oven to 180 deg C. Sift together the flour and baking powder. Mix together the remaining ingredients and add to the flour. Stir till blended. Pour into a greased medium loaf tin and bake at 180º C for 1 hour. Less time required for baking in fan assisted ovens. Check after 40 minutes.
